Cook Berry King

Method

  1. Boil the pasta

Cook linguine in well-salted water until just shy of al dente. Save a cup of the pasta water, then drain.

  2. Sear the shrimp

Heat the oil in a large skillet over medium-high. Season the shrimp and sear 1 minute per side. Remove to a plate.

  3. Build the sauce

Lower the heat, melt half the butter, and cook garlic and pepper flakes 30 seconds. Add the wine and simmer until reduced by half.

  4. Toss

Add the pasta, remaining butter, lemon juice and ½ cup pasta water. Toss until glossy.

  5. Finish

Return the shrimp, add zest and parsley, and serve immediately.

Watch the shrimp

Shrimp are done when they curl into a loose C. A tight O means they are overcooked.
